One Aldwych takes quality to a new level with digital food safety

One Aldwych strives to make sure that guests have the most enjoyable stay possible from the moment they step through the door. For a luxury hotel, reputation is everything.

In the heart of Covent Garden, One Aldwych is one of the most renowned venues in London and continues to top polls for guest satisfaction and collect awards for exceptional service, amazing design and fantastic food. Indigo, the innovative dairy and gluten free restaurant at One Aldwych, serves visiting diners and overnight guests, as well as catering for the hotel’s room service and any events.

The kitchen never sleeps, with chefs coming and going at all hours. Previously, all daily hygiene and food safety compliance tasks were managed using pen and paper records. Unfortunately, these provided Dominic Teague, the Executive Chef, with little visibility over the status of these crucial processes.

Running a 24/7 operation, Dominic was aware that if one of his 40 employees forgot to perform one of the crucial HACCP checks, he might not find out until he was going through the records days later, when it was too late to do anything about it. To make sure there were no grey areas when it comes to compliance, One Aldwych switched to Checkit’s digital food safety management.

Checkit’s innovative cloud-based technology has given Dominic full visibility over the HACCP tasks in the kitchen and helped simplify the challenge of managing his staff during their shifts. Food safety compliance, as well as cleaning and health & safety tasks, are now managed using Checkit’s digital checklists, which have been tailored for each employee from sous chefs to kitchen porters. Checkit’s digital handset prompts staff when a task is due, and once complete, the results are automatically user and time-stamped and saved in the cloud to form audit-ready records of the compliance tasks carried out.

If a scheduled checked has not been completed by the end of the shift, Dominic receives an alert on his phone and can make sure that staff don’t leave until the job has been done. Checkit’s cloud-based records also enable him to keep an eye on things even when he is not in the kitchen, so that there are no surprises when an EHO visits the kitchen.

Switching to a cloud-based way of managing food safety has also enabled One Aldwych to improve efficiency. Eliminating paper processes has saved up to seven hours of staff time each week, and Dominic no longer needs to spend hours trawling through piles of paper records in order to ensure that all compliance checks have been performed on schedule.

The improved visibility has given Dominic better control over daily operations, and helped One Aldwych ensure that every possible step has been taken to ensure that hotel guests and visitors get to enjoy a truly exceptional dining experience.
